With over 60 years’ experience in hospitality our management team have worked with Michelin restaurants, AA rosette establishments, 5* Relais and Chateau and have previously achieved wine list of the year and a coveted Michelin Bib Gourmand. They are always on hand to answer any questions you may have and portray vast knowledge in our menu provenance, fine wines, and cocktails.

I have worked In professional kitchens for over 20 years now and in that time I have been lucky enough to work for some fantastic companies such as Exclusive Venues, The Bath Pub Company, Harbour Hotels and Thatchers Cider as well as some fantastic independent gastro pubs and restaurants.

I am originally from the west country, born in Bath, but I have been lucky enough to work and live on the Dorset coast twice before in my career, so I’m no stranger to the amazing produce this great county and coastline has to offer us!!

I feel very excited and privileged to be leading such a talented and passionate team in delivering the best customer experience for all our wonderful customers both old and new. Food and drink should be all about putting smiles on peoples faces, and that is what we are aiming to achieve here at the Guildhall Tavern!!

I have worked in hospitality for the past 20 years in a variation of different roles within several projects.

I started my career in Portugal where, I am originally from, before moving to the UK in 2008.My first experience’s upon moving to the UK was in Poole, working in the beautiful Haven Hotel and Cafe Shore in Sandbanks.

I then moved to the city of Bath where i worked in some of the cities top restaurants including Clayton’s Kitchen, Menu Gordon Jones, and finally Hudson Steakhouse, a well renowned award winning restaurant in Bath. It was whilst working in Bath for 6 years, I met Head Chef Sam and quickly built a friendship based around our shared vision and passion for creating the best customer experience we can.

Upon moving back to Poole, I started a very exciting project with the objective of having the number 1 Pan Asian restaurant in the area, and with hard work and consistency we achieved it with Drgnfly.

My aim and passion is to deliver the best dining experience for our guests making sure they have a memorable experience at the Guildhall Tavern.

While I’ve only been in the industry for 7 years my drive to learn and improve has led me here to the Guildhall. Coming from a scientific background I use this knowledge and apply this to the drinks I make in order to create something truly special with new techniques I learn along the way.

I was born and raised in Poole, but I was lucky enough to spend extended periods of time living in Spain and enjoyed the culture, and the beer.

I’ve come to the Guildhall because we all share the same goals and vision and have the drive to achieve what we know we can, this is already a fantastic venue but with all of us working together the Guildhall Tavern is quickly going to become one of the best around
